Fermentation is really about control over an environment, and this is most applicable to cheese making. In this class we will take you through the steps necessary to make numerous types of soft cheeses at home, plus guide you through the differences in technique and ingredients to get the various hardened and aged cheeses you see in stores and recipes. We will not just show you the steps to make cheese, we will also teach you why we do each step and how it affects the texture and flavor of the resultant cheese, as well as go through milk selection and other important considerations. Throughout the class, you sample delicious fresh cheese as it progresses from its most basic form into increasingly more textured and flavorful varieties!
